Spinach Ricotta Pie

- 1 package frozen spinach (about 1 pound/400 grams), thawed and very well drained shopping list
- 2 cups ricotta cheese shopping list
- 1 onion, finelly chopped shopping list
- 2 cloves of garlic, finelly chopped shopping list
- 5 medium sized mushrooms, chopped (I used brown mushrooms) shopping list
- 3 tbsp olive oil shopping list
- sal and pepper to taste shopping list
- 2 ready rolled packages of puff pastry shopping list
How to make it
- In a large frying pan saute the onion and garlic in olive oil.
- Add the spinach and mushrooms and let it all cook, stiring occasionally, for about 10 minutes.
- Let the spinach mix cool and mix in the ricotta cheese.
- Taste and season to taste.
- Pre-heat the oven to 375F.
- In a spingform pan place one of the puf pastry sheets. Pour in the filling and then cover with the other sheet.
- With a knife score the pastry so it looks nicer after baked.
- Bake for 30 to 40 minutes (depending on your oven and on the pastry quality).
- Remove from the pan after cooling of 5 minutes.
