How to make it

  • In a large frying pan saute the onion and garlic in olive oil.
  • Add the spinach and mushrooms and let it all cook, stiring occasionally, for about 10 minutes.
  • Let the spinach mix cool and mix in the ricotta cheese.
  • Taste and season to taste.
  • Pre-heat the oven to 375F.
  • In a spingform pan place one of the puf pastry sheets. Pour in the filling and then cover with the other sheet.
  • With a knife score the pastry so it looks nicer after baked.
  • Bake for 30 to 40 minutes (depending on your oven and on the pastry quality).
  • Remove from the pan after cooling of 5 minutes.
