Potato - Herb Waffles

- 1 kg potatoes, cooked and mashed smooth (I used a ricer), barely warm shopping list
- ¼ cup melted butter shopping list
- 2 eggs, beaten shopping list
- 4 cups 2% milk shopping list
- 2 ½ cups flour shopping list
- 2 cups whole wheat flour shopping list
- ½ cup rolled oats shopping list
- 1 tbsp baking powder shopping list
- 1 tsp salt shopping list
- 1 ½ tbsp sugar shopping list
- 1 tbsp dried parsley shopping list
- 1 tbsp minced fresh chives shopping list
- 1 tbsp minced green onion shopping list
- ½ tbsp fresh thyme leaves shopping list
How to make it
- Preheat the waffle iron and grease well with spray oil.
- In a bowl, beat together potatoes, butter, eggs and milk until well mixed.
- Add the flours, oats, baking powder, salt, sugar, parsley, chives, green onion and thyme. Stir to mix well.
- Cook waffles 6-8 minutes (they take longer than “regular” waffles). Serve hot with sour cream or plain yoghurt (it's excellent with Yoghurt With Variations).
Note: Leftovers freeze beautifully - pop them in the toaster for a quick dinner starch (or savoury breakfast - try it topped with maple syrup and bacon, or molasses baked beans!).
