How to make it

  • Into a large crock pot place the dried beans, salsa, onions and celery
  • Cover with liquid of choice about 3 inches over the top of everything
  • Slow cook low 8-10 hours until everything is tender
  • Season as desired
  • Optional: Hand blend the soup partially for desired texture
  • Note: one can add carrots, bell peppers, in addition if desired
  • Garnish the soup with a dollop of sour cream and sprinkle with fresh cilantro if desired
