Black Bean Salsa Soup

- 1 pkg ( 16 oz ) dried black beans shopping list
- chicken broth or water to cover shopping list
- 1 large jar of salsa- I used medium spicy shopping list
- 1 large onion chopped shopping list
- 1 cup diced celery shopping list
- seasonings as desired ( garlic powder, salt, pepper, cilantro etc ) shopping list
How to make it
- Into a large crock pot place the dried beans, salsa, onions and celery
- Cover with liquid of choice about 3 inches over the top of everything
- Slow cook low 8-10 hours until everything is tender
- Season as desired
- Optional: Hand blend the soup partially for desired texture
- Note: one can add carrots, bell peppers, in addition if desired
- Garnish the soup with a dollop of sour cream and sprinkle with fresh cilantro if desired
