How to make it

  • 1. Wash the ribs well under cold running water. The ribs are usually cut on a band saw and have bone dust and fragments on them
  • 2. Drain the ribs well and dry with paper towels and place in a large ziplock or non-reactive container.
  • 3. In food processor combine all the other ingredients except the green onion and the chilies if using and puree smooth.
  • 4. Pour the marinade over the ribs and coat well. Leave to marinade at least one hour but ideally overnight.
  • 5. Grill to desired doneness. I like mine well done with a little char from the sugar in the marinade.
