Rainbow Gelatin Mold

While this recipe is simple, it is time consuming with the chilling. But it is well worth the effort. I don't always use the flavors/colors of gelatin listed. For Christmas I wll use 3 boxes of red and 3 boxes of green gelatin. Read more For summer, a favorite of mine is to use 3 boxes "Melon Fusion" gelatin (Jell-o brand) and 3 boxes Watermelon flavor (Jolly Rancher brand). So use any combination you like to fit your theme or the season. A trifle bowl or a clear straight sided bowl works best for presentation. A 10 inch ring mold may be used as well, but reverse the order of the gelatin flavors. See less
Ingredients
- 1 box strawberry or cherry flavored gelatin shopping list
- 1 box orange flavored gelatin shopping list
- 1 box lemon flavored gelatin shopping list
- 1 box lime flavored gelatin shopping list
- 1 box "Berry Blue" (Jell-o brand) flavored gelatin shopping list
- 1 box grape flavored gelatin shopping list
- 6 cups boiling water, divided shopping list
- 3 cups cold water, divided shopping list
- 1 (8 ounce) block cream cheese, cut into 6 cubes shopping list
How to make it
- Dissolve grape gelatin in 1 cup boiling water..
- Add 1/2 cup cold water and stir.
- Spoon half into a glass bowl or trifle bowl.
- Chill until almost set.
- Pour remaining gelatin into a blender container.
- Add one cream cheese cube (1/6 of the block)
- Blend until smooth.
- Spoon over first layer and chill until set.
- Repeat process with "Berry Blue" gelatin followed by lime, lemon, orange and then cherry or strawberry gelatins.
- May be topped with whipped cream or whipped topping if desired.
