How to make it

  • Preheat oven to 350 degrees.
  • Line a rimmed cookie sheet with aluminum foil.
  • Set a rack over the rimmed cookie sheet.
  • Mix together dijon mustard, garlic, herbs and oil. Set aside.
  • Season chicken thighs with salt and pepper generously on both sides.
  • Stir together the fine bread crumbs, panko, cheeses, butter and spices. Set aside.
  • Using a silicone pastry brush, slather the mustard mixture completely covering the chicken thighs.
  • Dip mustard covered thighs in the bread crumb mixture and press the crumbs firmly onto the chicken.
  • Place on the rack over the cookie sheet.
  • Bake in 350 degree oven for two hours. It will be very crispy and deep golden brown. Good hot and also good cold the next day for picnic food.
