Devilish Oven Fried Chicken Thighs

- 8 to 10 bone-in skin-on chicken thighs (I bought the family pack on sale) shopping list
- 3/4 cup of dijon mustard shopping list
- 3 big cloves of garlic, microplaned or crushed to a paste shopping list
- 6 sprigs of fresh thyme, pulled off stem shopping list
- 1/2 tsp of dried rosemary (I didn't have fresh) 1 tbsp of fresh if you have it shopping list
- 2 tbsp of olive oil shopping list
- Salt and pepper shopping list
- 1 cup of bread crumbs, fine shopping list
- 2/3 cup of panko crumbs shopping list
- 2/3 cup of grated parmesan/pecorino romano cheese shopping list
- 2 tsp. of cayenne pepper shopping list
- 1 tbsp. of paprika shopping list
- 1/2 tsp of nutmeg shopping list
- 4 tbsp of melted butter shopping list
How to make it
- Preheat oven to 350 degrees.
- Line a rimmed cookie sheet with aluminum foil.
- Set a rack over the rimmed cookie sheet.
- Mix together dijon mustard, garlic, herbs and oil. Set aside.
- Season chicken thighs with salt and pepper generously on both sides.
- Stir together the fine bread crumbs, panko, cheeses, butter and spices. Set aside.
- Using a silicone pastry brush, slather the mustard mixture completely covering the chicken thighs.
- Dip mustard covered thighs in the bread crumb mixture and press the crumbs firmly onto the chicken.
- Place on the rack over the cookie sheet.
- Bake in 350 degree oven for two hours. It will be very crispy and deep golden brown. Good hot and also good cold the next day for picnic food.
