Triple Berry - Carrot Bran Muffins

- 2 cups bran cereal twigs shopping list
- 1 ¾ cups pomegranate juice shopping list
- 2 ½ tbsp ground flaxseed shopping list
- ¼ cup Truvia baking shopping list
- ¼ cup melted coconut oil or butter shopping list
- 1 ¼ cups whole wheat flour shopping list
- ½ tsp cinnamon shopping list
- ¼ tsp allspice shopping list
- ¼ tsp cardamom shopping list
- ½ tsp salt shopping list
- 1 tbsp baking powder shopping list
- ½ cup fresh or frozen (unthawed) blueberries shopping list
- 1 cup fresh or frozen (unthawed) cranberries shopping list
- 1 cup finely shredded carrots shopping list
How to make it
- Preheat the oven to 400F and grease 15 muffin cups.
- Combine the cereal, juice, flaxseed and Truvia in a large bowl, set aside for 10 minutes.
- Stir in the coconut oil until well blended, then add the flour, cinnamon, allspice, cardamom, salt and baking powder and mix until just combined.
- Fold in the berries and carrots.
- Bake for 25 minutes or until muffins test done. Immediately turn out onto a wire rack and cool.
