How to make it

  • Beat together the sugar, butter,vanilla and cream cheese until smooth
  • Beat in the eggs, one at a time
  • In separate bowl, whisk together the flour, baking powder and salt
  • In another bowl whisk together the cinnamon and sugar, mixing 2 Tbs into the flour mixture
  • Beat in the flour mixture into the creamed mixture
  • Fold in the apples
  • Place mixture into a buttered 8 inch springform pan
  • Smooth top
  • Sprinkle on the remaining sugar/cinnamon mixture
  • Bake in a 350F preheated oven until tested done in center with moist ( not wet ) crumbs attached, about 60 minutes.
  • Cool cake completely before removing sides of pan
  • Note: freezes well
