Cream Cheese Cinnamon Topped Apple Cake

- 11/2 cups sugar shopping list
- 1/2 cup butter softened shopping list
- 1 tsp vanilla shopping list
- 8 oz cream cheese softened shopping list
- 2 eggs shopping list
- 1 1/2 cups flour shopping list
- 1 1/2 tsp baking powder shopping list
- dash salt shopping list
- 2 large baking apples, peeled and chopped shopping list
- topping: shopping list
- 2 tsp cinnamon( I use the Saigon cinnamon which is a more potent cinnamon ) shopping list
- 1/4 cup sugar shopping list
How to make it
- Beat together the sugar, butter,vanilla and cream cheese until smooth
- Beat in the eggs, one at a time
- In separate bowl, whisk together the flour, baking powder and salt
- In another bowl whisk together the cinnamon and sugar, mixing 2 Tbs into the flour mixture
- Beat in the flour mixture into the creamed mixture
- Fold in the apples
- Place mixture into a buttered 8 inch springform pan
- Smooth top
- Sprinkle on the remaining sugar/cinnamon mixture
- Bake in a 350F preheated oven until tested done in center with moist ( not wet ) crumbs attached, about 60 minutes.
- Cool cake completely before removing sides of pan
- Note: freezes well
