How to make it

  • Place roast in baking pan or turkey roaster. Sprinkle brown sugar over the entire roast, and rub in. Season lightly with salt and pepper. Place pineapple slices on roast and secure with toothpicks if desired. Pour liquid from the can (or use 1 cup of bottled pineapple juice) over the roast.
  • Cover the roaster and turn the temperature to 275. It should take about 5 hours. Test with a meat thermometer and continue roasting until it reaches 160 degrees.
