Lasagna Soup

- 2 T olive oil shopping list
- 1 lb ground round shopping list
- salt and pepper shopping list
- 1 large onion, finely chopped shopping list
- 2 carrots, grated shopping list
- 3-4 garlic cloves, minced shopping list
- 4 C chicken broth shopping list
- 1 can crushed tomatoes, 28 oz. shopping list
- 1 lb lasagna noodles, broken into pieces shopping list
- 1 C torn basil leaves shopping list
- 1 C whole milk ricotta cheese shopping list
- grated parmesan, to pass at table shopping list
How to make it
- in a soup pot, heat oil. Add the beef, salt and pepper. Cook till browned, 4-5 min.
- stir in onion, carrots and garlic. Cook 5-7 min.
- Stir in 2 C water, broth, and tomatoes. Cover and bring to a boil.
- Add the pasta, cook till done, about 15 -18 min.
- Stir in basil. Simmer a few more minutes.
- Serve in bowls, and dollop with some ricotta.
- Pass the cheese.
