Ingredients
  • * 3½ pounds standing rib roast
  • * 1/3 pound of butter
  • * ½ cup oil
  • * 1 onion
  • * 1 carrot

Directions
  1. PREPARATION AND COOKING: Heat oven to 450° F. Coat beef with oil and butter; place in roasting pan. Salt and pepper it; add quartered onion and carrot cut in half. Cook 45 minutes for rare, cook 1 hour for medium, basting with its own juices from time to time.
  2. PRESENTATION: Position beef in the middle of the platter and place prepared spinach on both sides.
  3. EPINARDS EN BRANCH or WHOLE SPINACH: Break stems off 2 pounds of fresh spinach leaves, up to the leaf. Wash 2 or 3 times with water to clean. Bring to boil a large saucepan 2/3 full of water. Plunge spinach in, and cook 10 minutes. place the cooked spinach in a colander and run under cold water to retain the color and stop the cooking process. In a saucepan, melt the butter and add the spinach.
