West Indian - Style Sweet Potato Bun

- 12 oz ginger ale (not diet) shopping list
- ½ cup muscovado sugar shopping list
- 2 tbsp molasses shopping list
- 1 tbsp allspice shopping list
- 2 tbsp coconut oil shopping list
- 2 tbsp ground flax seed shopping list
- 1 cup flour shopping list
- 2 cups whole wheat flour shopping list
- 1 tbsp baking powder shopping list
- 1 cup sweet potato puree shopping list
- ¼ cup shredded coconut shopping list
- ½ cup raisins shopping list
- ¼ cup diced candied fruit mix shopping list
How to make it
- Heat the oven to 350F and grease a 9x5” loaf pan
- In a large pot, combine ginger ale, sugar, molasses, allspice and oil. Cook over low heat just until the sugar has dissolved and coconut oil is melted.
- Whisk in the flax seed and remove from heat.
- Mix in the flours, baking powder, sweet potato puree, coconut, raisins and candied fruit.
- Pour into prepared loaf pan
- Bake for 45 minutes or until a knife inserted comes out clean
