How to make it

  • Mix all the ingredients together until smooth and don’t skip the booze even if you are a teetotaler as the alcohol breaks down the enzymes in the meat and there is nothing left of the alcohol after cooking.
  • Marinate the meat for at least 1 hour – 12 hours (the longer the better) in a metal bowl or in zip lock bags. For safety, double the bag so there is no chance of a leak. The red food coloring will stain anything plastic.
  • These ribs are best cooked indoors in the oven as opposed to the outdoor grill.
  • Place the ribs on a rack over a pan with 1 inch of water. Preheat the oven to 225º and cook for 2 ½ hours or the loin strips for 1 hour. Brush the ribs or loin strips with honey and cook for 30 minutes longer.
