Cowboy Cornbread Salad

- 1 Batch Cornbread ( I make my own, but you can use a mix but either way ..add a little sour cream, buttermilk , and some chopped jalapenos) shopping list
- FOR THE bacon LAYER... 1 Pound Thick Slice bacon, cut into 1 inch squares, divided, save 1/4 cup, dice finer for garnish on the top shopping list
- FOR THE WHITE CREAMY LAYER... shopping list
- 1-1/2 Cup Mayonnaise shopping list
- 1 Cup Ranch Salad Dressing shopping list
- FOR THE COWBOY SALSA shopping list
- 1 Cup Chopped Tomatoes shopping list
- 1/2 Cup Green bell peppers, Chopped shopping list
- 1/2 Cup Sweet Vidalia Onion or Red onion shopping list
- 2 - 16 Ounce Cans Spicy chili beans, drained and rinsed shopping list
- 2 - 15-1/2 Once Whole Kernal Sweet Corn shopping list
- FOR A cheese LAYER - I use shredded cheddar or a mexican blend. shopping list
- FOR GARNISH, 4 Green Onions, thin sliced and MORE bacon! shopping list
How to make it
- This is a simple layered salad, first, prep all the different layers...
- Bake the cornbread according to the directions on the package, except substitute Sour Cream for the milk and add minced Jalapeno to the batter.
- Cook the bacon, crispy as you like. It is easiest for me to cut the bacon before cooking. Drain grease and set aside.
- Meanwhile, mix the Mayo and Ranch Dressing
- When that is done, mix the ingredients for the Cowboy Salsa
- Finally, grate the cheese. and sliced the Green Onions.
- And now... Assemble... Layer of bread on the bottom
- Layer of Cowboy Salsa
- Layer of Cheese
- Layer of Ranch mixed Mayo
- Repeat
- Once you have reached the top, garnish with chopped Bacon and Green Onions.
- Serve Chilled and ENJOY!
