Stuffed Avocado With Garlic Prawns

- 1 whole medium avocado shopping list
- 7-10 fresh prawns (more if very small) shopping list
- 4-5 cloves garlic, minced shopping list
- 2 tbsp olive oil shopping list
- salt shopping list
- pepper shopping list
- chili powder shopping list
How to make it
- Prepare the prawns by taking off the heads, peeling them, removing the tails and removing the black "vein" from the back. See Photo
- Cut the avocado in half and remove the pit.
- Scoop out the insides of each half leaving a thin "wall" to keep the shape of the fruit to be stuffed.
- Cut the avocado you scooped out into small pieces and place in a bowl. You can mix it up slightly to get some creaminess to the avocado but you still want the pieces to hold their shape.
- Place the prawns, garlic and olive oil in a pan over low heat and saute until the prawns turn pink and are cooked See Photo. Over cooking or using too high a heat will cause the prawns to get tough so be careful. This should not take very long at all.
- Pour the whole mixture, oil and all, over the avocado in the bowl.
- Add salt, pepper and chili powder and mix it all together. See Photo
- Spoon the mixture into the prepared avocado shells and sprinkle with more pepper to serve.
- Serve immediately.
