How to make it

  • Put the minced garlic in the water in a bowl and set aside
  • Peel the vudi and slice it into thick slices, 1-2 cm thick
  • Put about 1 cm of oil in a frying pan or saucepan and heat it
  • Add the vudi slices and cook them 3-5 minutes on each side
  • Remove the vudi from the oil and on a cutting board, use the back of a spoon to "squish" each slice and flatten it a bit
  • Put the flattened vudi slices into the garlic water and soak for about a minute
  • Clean the garlic bits off the vudi and pat it dry before returning it to the oil for another 3 minutes a side
  • They should be golden and crispy when done
  • Remove from oil, drain on paper towel and serve hot, sprinkled with salt
