Fried Garlic Vudi

- 1 large or 2 small vudi, green or yellow as opposed to brown shopping list
- 5 cloves garlic, minced shopping list
- 1 cup water shopping list
- oil for frying (I used canola) shopping list
- salt for seasoning shopping list
How to make it
- Put the minced garlic in the water in a bowl and set aside
- Peel the vudi and slice it into thick slices, 1-2 cm thick
- Put about 1 cm of oil in a frying pan or saucepan and heat it
- Add the vudi slices and cook them 3-5 minutes on each side
- Remove the vudi from the oil and on a cutting board, use the back of a spoon to "squish" each slice and flatten it a bit
- Put the flattened vudi slices into the garlic water and soak for about a minute
- Clean the garlic bits off the vudi and pat it dry before returning it to the oil for another 3 minutes a side
- They should be golden and crispy when done
- Remove from oil, drain on paper towel and serve hot, sprinkled with salt
