Cheese & Rocket Scones

- 4 cups self raising flour shopping list
- 2 tsp baking powder shopping list
- 2 tsp salt shopping list
- 1 tsp cayenne pepper shopping list
- 1 tsp ground white pepper shopping list
- 250g aged cheddar cheese, grated shopping list
- 100g rocket (arugula) leaves, finely chopped shopping list
- 1 cup cream shopping list
- 1 cup soda water (soda stream is fine!) shopping list
How to make it
- Heat oven to 200C
- Combine all ingredients except cream and water
- Mix cream and water in another bowl
- Make a well in the dry ingredient bowl
- Pour cream/water mix into the well
- Use a knife to draw all ingredients together - don't over-mix!
- Get a baking tray out and lay down a sheet of grease proof paper
- Get your hands dirty by pulling off lumps and shaping them so they look like fat cotton reels
- Space these on the baking sheet.
- Bake till springy to touch and golden brown, around 15-20 minutes
