Orange Jicama Kale Salad

This is another of my new summer salads I made recently - recipe from one of those grocery store recipe cards you often find in the deli or produce departments. I love jicama, so I was sure I would like this, and I was so right! Read more We loved the crunch from the jicama, the sweetness of the fruit, the bite from the jalapeno, and the different dressing - the flavors went together so nicely! If you're not a fan of kale, you can omit it! See less
Ingredients
- Dressing ingredients: shopping list
- 1 teaspoon extra virgin olive oil shopping list
- 1 teaspoon toasted sesame oil shopping list
- Zest of 1 lime shopping list
- Juice of 1 lime shopping list
- ½ tablespoon brown sugar shopping list
- 1 teaspoon fish sauce (sold in the Asian section of your grocery store) shopping list
- 1 whole jalapeno pepper, seeds and veins removed, and diced shopping list
- Salad ingredients: shopping list
- 2 large navel oranges, peeled and diced shopping list
- 1 small jicama, peeled and diced shopping list
- ½ cup or more (depending on your likes) chopped kale (leaves only - discard the stems) shopping list
- ¼ cup chopped cilantro shopping list
How to make it
- Whisk all dressing ingredients together in a small bowl; set aside.
- Combine all salad ingredients in a large bowl, mix to combine.
- Drizzle dressing over all; toss to coat.
- Keep chilled until ready to serve.
