Ingredients
  • Dry Mix:
  • 2 1/4 cups of cake flour
  • 1 1/2 tsp. of baking powder
  • 1/2 tsp. of baking soda
  • 1/4 tsp of salt
  • 1/4 tsp of nutmeg (fresh grate on rasp about 5 passes)
  • 1/8 tsp of cinnamon
  • 1/8 tsp of ginger
  • 3/4 cup of raisins
  • Moist Mix:
  • 1 large egg
  • 1/3 granulated sugar
  • 1/2 cup of butter
  • 1/2 cup of milk
  • 1/4 cup of dark rum
  • 1 tsp vanilla extract

Directions
  1. Preheat oven to 400 degrees.
  2. Prep 12 muffin cups, (butter/flour) or use muffin liners.
  3. Combine dry mixture in a large bowl.
  4. Melt butter. In a medium bowl, beat the egg and add the rest of the wet ingredients, blend to mix.
  5. Add moist mixture to dry all at once. Stir until batter is blended but still lumpy.
  6. fill muffin tins 3/4 full.
  7. Bake for 20 minutes.
