Rum Raisin Muffins

- Dry Mix: shopping list
- 2 1/4 cups of cake flour shopping list
- 1 1/2 tsp. of baking powder shopping list
- 1/2 tsp. of baking soda shopping list
- 1/4 tsp of salt shopping list
- 1/4 tsp of nutmeg (fresh grate on rasp about 5 passes) shopping list
- 1/8 tsp of cinnamon shopping list
- 1/8 tsp of ginger shopping list
- 3/4 cup of raisins shopping list
- Moist Mix: shopping list
- 1 large egg shopping list
- 1/3 granulated sugar shopping list
- 1/2 cup of butter shopping list
- 1/2 cup of milk shopping list
- 1/4 cup of dark rum shopping list
- 1 tsp vanilla extract shopping list
How to make it
- Preheat oven to 400 degrees.
- Prep 12 muffin cups, (butter/flour) or use muffin liners.
- Combine dry mixture in a large bowl.
- Melt butter. In a medium bowl, beat the egg and add the rest of the wet ingredients, blend to mix.
- Add moist mixture to dry all at once. Stir until batter is blended but still lumpy.
- fill muffin tins 3/4 full.
- Bake for 20 minutes.
