Rosemary And Herb Roasted Chicken

- 2 leg and thigh portion pieces of chicken shopping list
- ¼ cup olive oil shopping list
- 2 teaspoons fresh minced rosemary shopping list
- 1 teaspoon fresh thyme, minced shopping list
- 2 teaspoons freeze dried or fresh Italian seasoning shopping list
- 3 small garlic cloves, minced shopping list
- 1/3 teaspoon salt shopping list
- 1/3 teaspoon pepper shopping list
How to make it
- 1. Pull chicken from refrigerator 1 hour before cooking time.
- 2. Meanwhile, in a small saucepan, warm oil and add all herbs, garlic, salt and pepper. stir; remove from heat. Let set until room temperature.
- 3. Preheat oven to 425. Place the chicken in a baking dish and loosen the skin from the meat. Rub olive oil and herbs under skin making sure it is coated well, then pull the skin back over the meat. Using remainder of oil mixture on top of skin.
- 4. Bake chicken uncovered 50 to 55 minutes or until juices run clear.
