Family Style Tuna Casserole

- 225g/8oz Linguine - cooked al dente and well drained shopping list
- 6tbsp butter shopping list
- 450g/1lb Mushrooms - thinly sliced shopping list
- 4 Spring Onions - thinly sliced shopping list
- 4tbsp Plain Flour shopping list
- 225ml/8 fl oz Milk shopping list
- ½tsp Salt or to taste shopping list
- ¼tsp freshly ground black pepper shopping list
- 2 x 120g/4oz tins Tuna - drained and flaked shopping list
- 225g/8oz frozen Peas - cooked and drained shopping list
- 120g/4oz Parmesan cheese - finely grated shopping list
- 225g/8oz fresh bread Crumbs shopping list
How to make it
- Pre -Heat oven to 180c/350f/gas 4 to 5;
- Grease an Oven baking dish;
- Melt 4 tbsp butter in a large saucepan over medium-low heat;
- Add mushrooms and sauté, stirring occasionally, until browned and tender;
- Add spring onions, stir in well, and continue cooking for 1 minute;
- Stir in the flour until well mixed;
- Gradually stir in the milk, stirring constantly;
- Continue cooking, stirring constantly to avoid lumps until thickened;
- Add salt, to taste, and pepper;
- Stir in the tuna and peas and mix well;
- Add the linguini and mix in well;
- Pour the mixture into the baking dish and sprinkle over with Parmesan;
- Melt the remaining 2tbsp butter and toss with the bread crumbs;
- Sprinkle the crumbs over the top of the oven mixture;
- Bake for 25 to 30 minutes or until lightly browned and bubbly.

I have made this recipe a few times, we really like it. I used lactose free milk and it made no difference in the taste according to my husband. We had a salad to go with it.

Delicious!! I had to sub the milk and butter for lactose free Earth balance spread and lactose free milk.Did not add the parm. cheese and it was very tasty. Next time i make it i will double the milk sauce, personal preference.
