Steak, Red Onion And Blue Cheese Sandwich

- STEAK shopping list
- 2 x 225g/8oz Sirloin/Rib Eye Steaks Extra Virgin Olive Oil Salt and freshly ground black pepper 4 slices Ciabatta - for toasting shopping list
- ONION SLICES shopping list
- 1 Red Onion - finely sliced 2tbsp Extra Virgin Olive Oil Salt and freshly ground black pepper shopping list
- blue cheese SAUCE shopping list
- 120ml/4fl oz/10tbsp White Wine 120g/4oz Strong blue cheese 45ml/3tbsp Double Cream shopping list
How to make it
- ONION SLICES
- Mix the onion with oil in a bowl and season with salt and pepper;
- Oil and heat a griddle pan, add the onion and cook for some 5 minutes or so or until soft and golden;
- Remove, set aside and keep warm;
- CHEESE SAUCE
- In a small saucepan, pour in the wine and, on high heat, reduce by about half;
- Reduce heat to low, add the cheese, stirring continuously until melted;
- Add the cream and, still on low heat and stirring continuously, cook until sauce thickens, but not boils, to your taste and required consistency.
- THE SANDWICHES
- Oil and season the steaks;
- Oil and heat a griddle pan to sizzling, add the steaks and cook each between 2 and 5 minutes on each side, depending on taste - rare/medium/well done;
- Remove and keep warm;
- Lightly oil the Ciabatta, add to the pan and, still on high heat, toast to desired crispiness;
- Remove and lay the steaks onto a slice, cover with onions, drizzle over with sauce and top with other slice.
