Couscous Salad

- For the dressing shopping list
- 2 T . Olive oil shopping list
- 2 T . Fresh lemon juice shopping list
- 1/4 t.. Salt shopping list
- Ground black pepper to taste shopping list
- For the salad shopping list
- 1 1/2 cups of water , or chicken broth shopping list
- 1 t. olive oil shopping list
- 1 cup couscous shopping list
- 1 cup quartered cherry or grape tomatoes shopping list
- 5 T. pitted , sliced Kalamata olives shopping list
- 5 T. fresh parsley , chopped shopping list
- 4 o.z. feta cheese , crumbled shopping list
How to make it
- Whisk dressing ingredients in a small bowl , and set aside.
- In medium sauce pan , heat water ,( or chicken broth) , and olive oil to a boil .
- Stir in couscous , cover and remove from heat.
- Let stand 3 mins. Uncover , and fluff with a fork.
- Place couscous in a medium serving bowl.
- Pour dressing ingredients over couscous , and toss with a fork.
- Add tomatoes , olives , parsley , and feta cheese . Toss to combine .
- Serve hot , or at room temp .

This is a lovely salad that makes great leftovers the next day… I have added cooked chicken to make it a main dish. Fresh lemon juice in the dressing is A-1!!!
