Spanish Style Salsa Roja - Pico de Gallo

- 2 large ripe Tomatoes - peeled, deseeded and chopped shopping list
- 1 small to medium Red Onion - chopped shopping list
- 2 Jalopeno Chillies - deseeded and chopped - or to taste for heat by retaining some seeds shopping list
- ½ to 1tsp Salt - to taste shopping list
- 2tsps Lime Juice - to taste shopping list
- 2 to 3tbsp fresh Coriander - roughly chopped - to taste shopping list
How to make it
- Combine all the ingredients together well in a bowl, cover with clingfilm and refrigerate for a minimum of 2 to 3 hours to allow all the flavours to mature.
