Shrimp Alfredo Fettuccine My Way

- 2 med. tomatoes , seeded and chopped. ( can use grape or cherry , quartered ) . shopping list
- 2 med. zucchini , halved , and sliced. shopping list
- 1 bunch green onions ,sliced . ( we use the firm green part too ) shopping list
- 1-2 cloves garlic , minced . shopping list
- 1 med. red bell pepper, seeded , and chopped . shopping list
- 4-6 o.z. fresh white mushrooms , sliced. shopping list
- 12 o.z. fettuccine noodles shopping list
- 1 l.b. med. raw shrimp , peeled , and de-veined . shopping list
- 2 T . olive oil , divided . shopping list
- Salt and pepper to taste. shopping list
- 1 jar favorite alfredo sauce . shopping list
- 1/4 cup chicken broth . shopping list
How to make it
- Bring a large pot of salted water to a boil . Add fettuccine , cook until just al dente . Drain , and set aside.
- While noodles are cooking , heat a large skillet over med. high heat . Add 1 T. olive oil .When hot , add all veggies , except tomato , and saute until crisp , tender .
- Remove veggies . Wipe skillet , if needed.
- Return skillet to heat , and add 1 T. olive oil .
- When hot , add shrimp , and saute , until just pink.
- Remove shrimp , and return skillet to heat .
- Pour the chicken broth , and jarred sauce into pan , and stir until smooth , and combined. Stir in veggies , and tomatoes , and heat through , stirring often.
- .Reduce heat to med. Stir in shrimp , and cooked pasta .
- Heat through , stirring often. Add salt and pepper to taste . Pour into large serving dish.
