How to make it

  • 1. Sift flour, cocoa, instant coffee, and salt together in a large bowl. Set dry ingredients aside.
  • 2. With a mixer cream butter and sugar until light and fluffy, mix about 5 minutes.
  • 3. Add egg and vanilla and mix until just combined.
  • 4. Add dry ingredients to wet ingredients and mix slowly until combined.
  • 5. Wrap dough in plastic wrap and chill for about 30 minutes.
  • 6. Preheat oven to 350 degrees.
  • 7. On a lightly floured surface roll dough about 1/4" thick or roll between sheets of waxed paper.
  • 8. Dip cookie cutter(s) in flour and cut cookie shapes with your favorite cookie cutter(s).
  • 9. Bake on parchment lined cookie sheet 12 -15 minutes.
  • 10. Transfer to cooling rack and cool completely.
  • Recipe is noted for Chocolate Cookies.
  • To make Vanilla Cookies omit cocoa powder and instant coffee and use a total of 3 cups of flour.
  • Length of baking time will depend on size of cookies and actual rolled thickness. This recipe yields approximately 24, 3 inch cookies, rolled at 1/4" thick.
