How to make it

  • 1. 3 quart saucepan or small stock pot or Dutch oven over medium heat. Add oil and onion if using fresh ground meat add now and cook with onion, cook stirring and chopping until meat is no longer pink. Remove as much fat as possible.
  • 2. Add the rest of the ingredients to the pot except the toppings. Cook stirring occasionally until everything is warmed through about 10 to 15 minutes. Serve in bowls topped with any or all of the toppings you like

    I've made this several times and love it! I often use leftover shredded chicken instead of the ground meat. I usually add a red or orange pepper instead of the jalapenos so the kids can eat it as well. I've used all kinds of different beans, even chick peas. I don't have a particular favorite, so I change it up ;)
    I like to add crushed tortilla chips or cut thin strips of soft tortillas and serve them on top of the soup like noodles.
