Taco Soup

- 1 pound ground turkey, or 2 to 3 cups cooked cubed chicken, ground beef, or stew meat shopping list
- 2 tablespoons oive oil shopping list
- 1 medium onion, chopped shopping list
- 1/8 cup M’s low sodium taco seasoning (recipe below) shopping list
- 1 can Cannollini beans rinsed and drained shopping list
- 1 can black beans rinsed and drained shopping list
- 1 can whole kernel corn with liquid or, 1 cup frozen whole kernel corn thawed shopping list
- 32 ounces low sodium chicken broth shopping list
- 1 (15.25 oz.) diced tomatoes, undrained shopping list
- 1 (4.5 oz.) can Old El Paso chopped green chiles shopping list
- 2 to 3 teaspoons diced jalapenos from a jar (along with about 2 teaspoons of the liquid) shopping list
- Taco Seasoning shopping list
- 1 tablespoon chili powder (I use Gebhardt brand it’s very mild) shopping list
- ½ teaspoon garlic powder shopping list
- ½ teaspoon onion powder shopping list
- Scant 1/8 teaspoon cayenne shopping list
- 2 teaspoons Mrs. Dash Southwest Chipotle Seasoning shopping list
- 1 ¼ teaspoons Mrs. Dash Fiesta Lime Seasoning shopping list
- ¾ teaspoon dried oregano shopping list
- ½ teaspoon paprika shopping list
- 1 ½ teaspoons ground cumin shopping list
- ¼ teaspoon Kosher or Sea Salt shopping list
- ¾ teaspoon black pepper shopping list
- Toppings: tortilla chips, cheddar cheese, jack cheese, jalapenos, sour cream, guacamole, Green onions etc. shopping list
- Notes: Another nice addition might be to add some refried beans. shopping list
How to make it
- 1. 3 quart saucepan or small stock pot or Dutch oven over medium heat. Add oil and onion if using fresh ground meat add now and cook with onion, cook stirring and chopping until meat is no longer pink. Remove as much fat as possible.
- 2. Add the rest of the ingredients to the pot except the toppings. Cook stirring occasionally until everything is warmed through about 10 to 15 minutes. Serve in bowls topped with any or all of the toppings you like

I've made this several times and love it! I often use leftover shredded chicken instead of the ground meat. I usually add a red or orange pepper instead of the jalapenos so the kids can eat it as well. I've used all kinds of different beans, even chi...more
