Oma's Borscht

- • 4 - 6 cups water shopping list
- • 2 turkey thighs - cut up shopping list
- • 2 bay leaves shopping list
- • 2 TB barley - fine shopping list
- • salt to taste shopping list
- • 2 stalks celery - chopped shopping list
- • 1 medium onion - chopped shopping list
- • 3 cloves garlic - chopped shopping list
- • 2 carrots - shredded shopping list
- • 2 small beets - shredded shopping list
- • 1 bunch fresh dill - tied shopping list
- • 1 small head of cabbage - shredded (not too fine) shopping list
- • 3 small potatoes - peeled - quartered shopping list
- • 1 can Italian tomato paste shopping list
- • 1 small onion - chopped fine shopping list
- • olive oil shopping list
- • flour shopping list
- • 1 26 oz. jar of tomato sauce - meat flavored shopping list
- • 1 TB soy sauce shopping list
- • 1 TB Worcestershire sauce shopping list
- • 2 cans pork and beans shopping list
How to make it
- In large stockpot boil water; add turkey, bay leaves, salt and barley.
- Cook for about 60 minutes, or until meat is tender.
- Take meat out of stockpot and cool.
- Remove meat from bones and cut into bite size pieces. Set aside.
- Add onion, celery, garlic, carrots, beets and dill. Bring back to a boil.
- Add cabbage and potatoes. Bring back to boil. Simmer 30 minutes. Taste and adjust salt if needed
- In small saucepan, make a roux with olive oil, finely chopped onion and flour. Brown onions until very dark in olive oil before adding flour. Add tomato paste to roux and cook another few minutes. Thin with soup stock if too thick.
- Remove dill from stockpot.
- Add tomato sauce, soy sauce, Worcestershire and pork and beans to stockpot.
- Add meat back to pot, simmer and taste to adjust seasoning if needed.
- Beware, this make a LOT! This is good to freeze. :-)
