Southwestern Stew With Mashed Green Plantains

- For the Stew: shopping list
- 3 whole tomatoes, diced shopping list
- 2 Jalapeños, diced shopping list
- 1/2 Onion, chopped shopping list
- 2 Garlic cloves, chopped shopping list
- 1 Cup black beans shopping list
- 2 Cups chopped Kale shopping list
- 1 Corn ear, corn chopped off, or I think like 1 1/2 cups? not sure. shopping list
- 1 whole cup Fresh cilantro (I used dried, it wasn't the same) shopping list
- Juice from 1/2 Lime shopping list
- Adobo, cumin, salt, pepper, parsley, thyme and red pepper to taste shopping list
- 1 Tbsp Shortening for frying (I used coconut oil) shopping list
- (Optional: 1/4 Cup of Salsa, and/or shredded cheese. I didn't put this in but I'll bet it would've been slammin') shopping list
- For the Mashed Plantains shopping list
- 2 Green Plantains, peeled and chopped shopping list
- 2 Pads of butter shopping list
- About 1/4 cup Milk shopping list
- More garlic powder and/or Adobo shopping list
- 12 Cups of Win shopping list
How to make it
- Boil the plantains until tender, about 10 minutes. Remove from water and put into a bowl, put the butter in to melt and sprinkle some adobo up in there. Mash with a potato masher. It's still gonna be hella lumpy so if you really want to do it up, I suppose you can use an immersion blender. Add the milk to make it creamy. (I used cashew milk, which is actually creamier than regular milk. Add little bits at a time because you may not need as much as I did)
- In a skillet on medium flame, saute the onions, jalapeños, corn, beans, garlic and kale. Add the tomatoes (and salsa if desired) when the onions and stuff caramelize, deglaze the pan with the tomato juice. It's yummeh! (I didn't time it, just make sure you pay attention)
- Add spices and stir well. Cover if possible. Lower the heat and let it cook for another 10-15 minutes until cooked thoroughly.
- Add the cilantro and lime juice like 2 minutes before everything is done, and stir well. Serve the plantains with the stew on top, garnish with more fresh cilantro, a lime wedge and parsley for festive presentation.
- Add some shredded cheese too, if you want, because holy crap that would be amazing and I really wish I had some. Do you have some? If so, use it, and then come give the rest of it to me because I have leftovers.
