Mascarpone Frosting

- 1/2 cup unsalted butter, softened shopping list
- 4 oz. mascarpone cheese, softened shopping list
- 1 tsp vanilla extract shopping list
- scant 1/4 tsp orange extract (or almond) shopping list
- 4 cups confectioner's (powdered) sugar shopping list
- pinch of salt shopping list
How to make it
- In large bowl, blend butter until fluffy. Add mascarpone and beat until combined and light and fluffy (about 2 minutes)
- Blend in extracts.
- Blend in a pinch of salt, and 1 tbsp milk and then add sugar gradually, about 1 cup at a time, beating well after each addition, until you have the consistency desired.
- You can add more sugar or more milk to achieve the proper consistency.
- Makes enough to frost the top of a 13" x 9" cake, or a 9" x 9" with some left over.
