Mascarpone Frosting

Came up with this frosting recipe to help out an uninspired carrot cake :) Needed something a little more special than the typical cream cheese frosting, so I started out by subbing mascarpone cheese for the cream cheese. Read more Amazingly smooth and light, but at the same time rich, this is like cream cheese frosting, but with a milder flavor. It saved that carrot cake from going into the trash, and we have some leftover that we will use to stuff strawberries with for dessert tonight! See less
Ingredients
- 1/2 cup unsalted butter, softened shopping list
- 4 oz. mascarpone cheese, softened shopping list
- 1 tsp vanilla extract shopping list
- scant 1/4 tsp orange extract (or almond) shopping list
- 4 cups confectioner's (powdered) sugar shopping list
- pinch of salt shopping list
How to make it
- In large bowl, blend butter until fluffy. Add mascarpone and beat until combined and light and fluffy (about 2 minutes)
- Blend in extracts.
- Blend in a pinch of salt, and 1 tbsp milk and then add sugar gradually, about 1 cup at a time, beating well after each addition, until you have the consistency desired.
- You can add more sugar or more milk to achieve the proper consistency.
- Makes enough to frost the top of a 13" x 9" cake, or a 9" x 9" with some left over.
