How to make it

  • Brown ground beef in skillet. Pour off extra grease, season with salt, pepper, and oregano. Set aside.
  • In a large bowl, mix cottage cheese, eggs, parsley, and Parmesan cheese thoroughly.
  • In 9 x 13 pan, spread a layer of pasta sauce. Top with a layer of uncooked lasagna noodles. She breaks one in half to fill the pan.
  • Layer more pasta sauce, 1/3d of the meat, 1/3d of the cottage cheese mixture, and a second layer of noodles.
  • Top with more sauce, another 1/3d of the meat, 1/3d of the cottage cheese mixture, and noodles.
  • Top with remaining sauce, meat, and cottage cheese mixture. Sprinkle a generous amount of Mozzarella cheese on top.
  • Bake at 350 for one hour.

    A bit different from how I make mine, but who died and left me in first place?
    I live in Hamilton Ontario, with more Italians than anyplace other than Italy, and have learned to do it a bit differently. We get "fresh pasta" here, so its just put a bit of EVOO on the edges of the pan, and lade in the noodles, that noodles are the bottom edge of the lasagna. "Ricotta Cheese" instead of cottage cheese (though this is getting sort of snooty! There's not a lot of difference) I use 'triple mix' (ground beef, pork and veal, sort of a staple where I live, but comes up great) and generally add in fine chipped peppers and onions. Again, with all these Italians around me, I use Provolone ("Stinky Cheese" as we non-Italians call it) instead of Mozza, and usually through in a heavy layer of pepperoni somewhere in the middle of it. Your recipe is entirely correct, and my improvisions are just an "eight ball" of having a bit of fun, but you might want to give them a look!
