How to make it

  • Saute the onion on a medium heat with 1 tbsp butter and about 2 tbsp olive oil stirring occasionally. When the onion become soft after about 10 minutes add salt and pepper. Then add the garlic when you smell the aroma of the garlic add the wine or beef stock.
  • When the wine evaporates add the beef. When the beef heats up add salt and pepper to flavor. Just as the beef is cooked add the peas with the liquid bring to a soft boil and lower the heat to simmer. Add the mascarpone or cream bring back to a simmer and taste and adjust for additional seasoning if needed.
  • Add the slightly under cooked pasta and the thyme mix well. When the pasta is aldente add the additional tbsp of butter mix again and put the cooked pasta into a serving bowl and serve. I like this with a nice helping of fresh ground black pepper and fresh chopped parsley
