How to make it

  • Cook the rice in salted water, the day before is best
  • Heat 1 Tbs of oil in a wide bottom frying pan.
  • Add the chicken and and cook until no longer pink, approx. 5 mins.
  • Remove chicken to a warm bowl.
  • Add 2 Tbs of oil to the pan, high heat.
  • Add the mushrooms and celery and cook for approx. 5 mins or until celery is slightly soft.
  • Push the veggies to the side of the pan.
  • Tilt the pan 90 degrees and add the eggs. Cook for about 3 mins, scrambling.
  • Mix eggs and veggies together.
  • Add the rice to the pan and stir for about 2 mins.
  • Add the chicken
  • Add the soy sauce and stir well.
  • Add the green onions and peas and stir
  • Serve and enjoy!!
