Chicken And Veggie Fried Rice

- 1 cup rice 2 cups water, plus salt shopping list
- 1 chicken breast, approx. 1 cup cut into 1/2 inch pieces shopping list
- 1 stalk celery, sliced shopping list
- 4 oz. mushrooms, roughly chopped shopping list
- 3 eggs, beaten shopping list
- 1/4 cup low sodium soy sauce, I use Bragg's shopping list
- 3 Tbs avocado oil, or more shopping list
- 1 cup frozen peas, thawed and warmed shopping list
- 3-4 green onions, sliced shopping list
How to make it
- Cook the rice in salted water, the day before is best
- Heat 1 Tbs of oil in a wide bottom frying pan.
- Add the chicken and and cook until no longer pink, approx. 5 mins.
- Remove chicken to a warm bowl.
- Add 2 Tbs of oil to the pan, high heat.
- Add the mushrooms and celery and cook for approx. 5 mins or until celery is slightly soft.
- Push the veggies to the side of the pan.
- Tilt the pan 90 degrees and add the eggs. Cook for about 3 mins, scrambling.
- Mix eggs and veggies together.
- Add the rice to the pan and stir for about 2 mins.
- Add the chicken
- Add the soy sauce and stir well.
- Add the green onions and peas and stir
- Serve and enjoy!!
