How to make it

  • Crust:
  • Combine flour, oats, sugar and salt. Cut in butter till crumbly (use hands if needed), Add water to make a ball.
  • Press into greased 9 x 13 pan
  • Bake at 350 for 20 minutes.
  • Filling:
  • In large bowl, beat eggs and then combine all other ingredients. Take to see if you want more spices and add to taste.
  • Pour into crust, and bake for 45-60 minutes till firm and set.
  • Remove and cool.
  • Put in refrigerator to get set and cold.
  • Serve with whipped cream.

    Since we don't care for oatmeal crusts or toppings in things like crisps, cobblers, bars, etc., I used my tried and true crust from my lemon bars recipe to make more of a traditional crust for this, so my rating is only for the filling. I halved the recipe to bake in an 8-inch square pan and omitted the pumpkin pie spice since there are already individual spices listed and extra would have been overkill for us. (Maybe the recipe submitter meant to list one or the other??) Cut into squares and topped with whipped topping made this taste exactly like pumpkin pie, my all-time favorite!!! That makes it 5 big shiny stars in my book! This is something I will make again when I don't want to mess with rolling out a pie crust.
