Chicken And Spinach Roulade

- 4 Boneless chicken breasts shopping list
- 1 bag frozen chopped spinach shopping list
- 1/4 cup grated Parmesan cheese shopping list
- 1/2 cup Mozzarella cheese shopping list
- Olive Oil shopping list
- Garlic powder shopping list
- Salt shopping list
- Fresh Ground black pepper shopping list
- 1 cup Seasoned bread Crumbs shopping list
How to make it
- Prep the chicken;
- Filet the breasts
- Place one piece at a time in a 1gallon plastic bag and pound out very thin. Be careful not to tear the meat.
- Lightly season (to your taste) each piece with salt, pepper and garlic and set aside.
- Spinach mix;
- Thaw spinach and press out as much moisture as possible.
- Warm in microwave for 45 seconds to a minute.
- Add to warm spinach the Parmesan, Mozzarella, salt, pepper, and garlic to taste. I make the spinach quite garlicky, but again, add to your taste.
- Prep to cook;
- Pre-heat oven to 400 degrees (f).
- Place bread crumbs on a plate.
- Line a Baking Sheet with foil and lightly oil with Olive Oil.
- Lay a piece of chicken on a flat surface and drop a table spoon or so of the spinach mixture on the chicken toward one end (wide end) and roll up the filet from the wide end to the narrow end and insert a toothpick.
- Take each of the rolls and cover with Olive Oil, roll in bread crumbs and place on baking sheet.
- Put this all in the pre-heated oven toward the top and bake for about 30 minute or until juices are clear, crumbs are nicely browned and maybe a little cheese oozing out.
- Serve with Mashed Potatoes or rice and a nice green salad.
- **** keep in mind the amount of Parmesan and use salt accordingly!
