Stuffed Artichokes

- 4 artichokes shopping list
- 4 cloves of garlic shopping list
- 1 piece of pecorino romano cheese shopping list
- olive oil for drizzling shopping list
- pinch of salt shopping list
How to make it
- Cut the stems and the tops off the artichoke. Wiggle the artichoke back and forth to open the leaves. Discard the tough outer leaves.
- Cut the cheese into thin pieces and insert them between the artichoke leaves. Place a garlic clove into the centre of the artichoke
- Wedge the artichokes into a pot, they must be close together with no room to move. They should also be suspended above the bottom of the pot. See Photo
- Fill pot with water, do no cover the chokes. Water line should be one inch below the tops of the chokes.
- Drizzle a little oil in the chokes and water
- Note: To keep the artichokes from browning place in a bowl of water with a 1/2 lemon for 30 minutes. They can also be cooked in a steamer basket.
