How to make it

  • Add the garlic to a food processor and pulse until fine or dice by hand. Finish with a mortar and pestle with a pinch of kosher salt and make into a fine paste.
  • Put the garlic into the diced tomatoes. Add the basil. Add the Cheese. Add a pinch of salt and the black pepper. Drizzle in just a bit of olive oil. Mix well and put into a large zip lock bag or a tightly sealed bowl
  • Add to 1 lb of cooked aldente spaghetti add a some more olive oil and cheese if need.
  • Mix well let sit about 1/2 hour and serve with a crusty Italian bread.
