How to make it

  • Heat a small skillet on medium. Add egg when heated, and cook to your liking.
  • Slice avocado in half, scoop out half and mash in bowl.
  • Toast bread while you're mashing avocado.
  • Once bread is toasted, butter if desired.
  • Spread avocado on toast and top with the fried egg. Season with salt and pepper, if desired.
  • To store the other half of the avocado, I place it in a jar, then cover it with cold water and store it in the fridge for the next day. Let it drain on a paper towel, then mash as usual. This will keep it from turning brown.
