Healthy Egg & Avocado Breakfast Sandwich

- 1 large egg shopping list
- 1/2 an avocado shopping list
- 1 slice of whole grain bread shopping list
- butter, optional shopping list
- Salt & pepper, optional shopping list
How to make it
- Heat a small skillet on medium. Add egg when heated, and cook to your liking.
- Slice avocado in half, scoop out half and mash in bowl.
- Toast bread while you're mashing avocado.
- Once bread is toasted, butter if desired.
- Spread avocado on toast and top with the fried egg. Season with salt and pepper, if desired.
- To store the other half of the avocado, I place it in a jar, then cover it with cold water and store it in the fridge for the next day. Let it drain on a paper towel, then mash as usual. This will keep it from turning brown.
