How to make it

  • Preheat oven to 325°
  • Put all the ingredients except the eggs and carrots in a large bowl.
  • Mix together with a wooden spoon,once mixed add the eggs one at a time beating after each addition
  • add the carrots and mix until it comes together
  • Pour the batter into a greased bunt pan and bake for one hour and 10 minutes
  • Let the cake cool for about 10 to 15 minutes before taking it out of the pan
  • For the icing
  • Using a hand beater or a KIA mixer cream butter and cream cheese together
  • add the vanilla then add the icing sugar a little at a time and beat until fluffy
  • When the cake is cold ice it with the cream cheese icing
  • When I make this cake for my family I use Earth balance spread in place of butter and lactose-free milk in place of the milk. I do not put the icing on my own piece
  • of cake as I am lactose intolerant.

    This was so very good. Other than subbing Becel for the oil I made this exactly as written. Great recipe Manella, this will be my go to recipe for carrot cake from now on. Thanks a bunch.
