How to make it

  • Pre heat the oven at 400 degrees.
  • Rub the peppers with oil and then salt them. Put the garlic in a piece of aluminum foil drizzle it with oil and salt and pepper enclose the garlic in foil and put into the oven with the peppers.
  • Bake about 40 minutes or until the skins char. and the garlic cloves are soft but not burned. If need return to the oven until done.
  • Remove and place the peppers in a glass bowl cover with saran wrap. Allow the peppers to sit until they are cool enough to handle and the skins separate from the meat of the pepper.
  • Remove the peppers and take off the skin. Slice the peppers into 1/4 inch strips. place in either a bowl or a jar add the garlic strain all the juice from the peppers and add it to the bowl. Add some oil so the peppers are completely covered. Lightly salt and pepper them cover and save them. The longer you allow them to sit in the oil with the garlic the better.

    That's good...
    Cuz' I always prefer to roast my peppers!
    Somehow it just makes a recipe setup and take notice when one roasts 'em fresh :o)
