Soft Ginger Bars

- 1 ¼ cups sugar shopping list
- 1 cup butter or margarine, softened shopping list
- 1 egg shopping list
- 3 tablespoons molasses shopping list
- 1 teaspoon vanilla shopping list
- 3 cups all purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 2 teaspoons ground cinnamon shopping list
- 1 ½ teaspoons ground ginger shopping list
- ¼ teaspoon salt shopping list
- ¼ teaspoon ground cloves shopping list
- 3 tablespoons coarse decorator sugars (if desired) shopping list
How to make it
- 1. Heat oven to 350 F. Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until well mixed (1 to 2 minutes). Add egg, molasses and vanilla. Continue beating, scraping bowl often, until creamy (1 to 2 minutes).
- 2. Reduce speed to low; add flour, baking soda, cinnamon, ginger, salt and cloves. Continue beating, scraping bowl often, until well mixed (1 to 2 minutes).
- 3. Press dough into greased 15x10x1 inch jelly roll pan. Sprinkle decorator sugar on top (if using). Bake for 16 to 20 minutes or until golden brown. Cool completely. Cut into desired shapes with knife or cookie cutters.
- Tip: To make ornaments: carefully make hole in top of bars with a drinking straw. Cool; thread 1/8 inch ribbon through hole and tie into bow.
- High altitude information: Reduce sugar to 1 cup and increase flour by ¼ cup to 3 ¼ cups. Bake at 350 F. for 18 minutes.
