Cream Filled Brownie Cupcakes

- 1 pkg. Brownie Mix ( I use Double Fudge) shopping list
- 1/2 cup heavy or whipping cream shopping list
- 1 Tbls. sugar shopping list
- 1 Tsp. vanilla shopping list
How to make it
- Grease or line a muffin pan (12)
- Prepare brownie mix as label directs for cake-like brownies
- Fill muffin cups 1/2 full with mix
- Bake 30-35 minutes until toothpick inserted in center comes out clean
- Cool cupcakes in pan 10 minutes
- Remove cupcakes from pan and cool completely on wire racks
- Make filling:
- In small bowl with mixed at medium speed beat cream, sugar and vanilla until soft peaks form.
- With tip of paring knife, carefully cut a 1 inch circle about 3/4 inch deep into top of each cupcake.
- Remove the cut out portion in one piece and set aside
- Spoon some of the cream mixture into each cupcake and set cut out centers on top
- Refrigerate for at least 1 hour.
