How to make it

  • Grease or line a muffin pan (12)
  • Prepare brownie mix as label directs for cake-like brownies
  • Fill muffin cups 1/2 full with mix
  • Bake 30-35 minutes until toothpick inserted in center comes out clean
  • Cool cupcakes in pan 10 minutes
  • Remove cupcakes from pan and cool completely on wire racks
  • Make filling:
  • In small bowl with mixed at medium speed beat cream, sugar and vanilla until soft peaks form.
  • With tip of paring knife, carefully cut a 1 inch circle about 3/4 inch deep into top of each cupcake.
  • Remove the cut out portion in one piece and set aside
  • Spoon some of the cream mixture into each cupcake and set cut out centers on top
  • Refrigerate for at least 1 hour.
