My Banana Snacking Cake

- 1 cup butter or margerine, melted (or 3/4 cup canola oil) shopping list
- 4-6 mashed ripe bananas (about 1-3/4 to 2-1/3 max cups of mashed banana) *see below shopping list

- 1/2 cup packed brown sugar shopping list
- 1 tablespoon Vanilla extract shopping list

- 1 cup semi-sweet pure chocolate chips or nuts of your choice shopping list

- *Not enough banana? you can top it up by using sour cream, yogurt, buttermilk or applesauce until you have about 2 cups total. shopping list
How to make it
- Preheat oven to 350f degrees. Grease or line a 9x13 inch cake pan (I only use a glass pan for this)
- Whisk together the flour, white sugar, baking powder and soda, salt, cinnamon and nutmeg together.
- Mash the bananas in a large bowl, add the br. sugar, melted butter and stir to combine. Add the eggs and vanilla and mix until blended using a wooden spoon or rubber spatula.
- Add the dry ingredients and fold, just before the flour is fully combined fold in the chocolate chips or nuts. (For extra chocolate decadence sprinkle extra chocolate chips on top of the batter before baking)
- Add the batter to the pan and bake for 40-55 minutes (the more banana you add the longer the bake) Check the center with a toothpick or cake tester for doneness, it should be dry in the centre and the cake will pull away from the sides of the pan.
- Let it cool for at least half an hour before cutting into it, and enjoy!
