Buttery Anise Cookies

- 1¾ c. butter, softened shopping list
- 1c. sucanat sugar or brown sugar shopping list
- 2 T. vanilla extract shopping list
- 1 t. anise extract shopping list
- 2 t. ground anise, optional shopping list
- 1 t. anise seed shopping list
- 1½ t. salt shopping list
- 3 c. unbleached all-purpose flour shopping list
- ¾ c. whole wheat flour shopping list
- ¼ c. brown rice flour shopping list
- 1 c. very finely chopped nut (walnuts, almonds, hazelnuts, or pecans) shopping list
- powdered sugar to dust cookies shopping list
How to make it
- • Cream butter and sugar together. Mix in extracts, anise, and salt.
- • Add other ingredients except powdered sugar. Be sure to work in all of the flour, using your hands to knead it if necessary.
- • Roll into a large, flattened disc, wrap in plastic wrap & refrigerate several hours or overnight.
- • Before baking, allow the dough to sit at room temperature until just soft enough to handle, about ½ hour.
- • Preheat oven to 300 degrees.
- • Roll dough into walnut–sized balls; place on ungreased or parchment lined cookie sheet 1” apart.
- • Bake for 40-45 minutes if you like browned cookies or 30-35 minutes if you prefer paler ones.
- • Cool 15 minutes.
- • Then roll cookies in powdered sugar.
