Grandma's Salmon Patties

- 1 large can pink salmon (about 14oz) shopping list
- 1 slice whole wheat bread shopping list
- 1 small onion, minced shopping list
- 1 carrot, shredded shopping list
- 1 egg shopping list
- salt and pepper to taste shopping list
- 1 large onion shopping list
How to make it
- Drain and de-bone salmon.
- In food processor, crumble bread (untoasted) to crumbs.
- Mince onion. Shred carrot.
- Mix salmon, breadcrumbs, onion, carrot and egg in bowl.
- Add salt and pepper to taste.
- Form 6 patties (or sized to your liking).
- Cut large onion into 8ths.
- Fry onion along with patties in small amount of oil until both sides are golden brown, and onion and sautee until is tender and golden. (Aprox 4-5 min a side)
- Can be served warm or cold, but best served at room temperature

I made this recipe a while back.Instead of the bread I used lactose, gluten free oats ground up fine.Also added garlic, it is a very tasty salmon patty that I will make again. Thank you Lindsay for the recipe.
