Banana Chocolate Chip Recipe
A unique recipe that I've revised several times. I'm giving you Version 2 to keep the real one in the family. A warning: if you want to eat just one or two cookies, dont make this. You wont be able to.

Ingredients
  • Wet ingredients:
  • 2/3 cup of shortening (Real butter works best)
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup mashed ripe bananas (freeze and thaw them beforehand. Makes the mixture more moist)
  • 2 Eggs
  • Dry Ingredients (Sift together in a separate bowl):
  • 2 1/4 cups of flour
  • 3/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1/4 teaspoon soda
  • 1 bag milk chocolate chips

Directions
  1. Beat shortening until creamy -- add sugar and beat until light & fluffy.
  2. Add eggs (one at a time) beating after each addition & until light & fluffy.
  3. Stir in vanilla
  4. add flour mixture alternately with mashed bananas (very important).
  5. Beat until smooth after each addition.
  6. Fold in Choc. Chips (I use milk chocolate chips).
  7. Drop by teaspoons onto ungreased cookie sheets.
  8. Bake 12 mins (approx.) @ 350 degrees. Cookies should appear white and firm to the touch on top but golden brown on bottom. Its best to watch these cookies carefully in order to attain the best flavor, as they cook unevenly.
