How to make it

  • Cook the potatoes in a large pan of lightly salted until softish, some 10 Minutes or so;
  • Drain, dry out a bit and beat to a smooth but firm mash with a little milk, egg yolk and salt and pepper;
  • Set aside to cool:
  • In a frying pan, large enough to take the potato cakes, on medium heat, spray in some oil, add the bacon and fry, turning occasionally until crispy but not burnt;
  • Remove from pan, drain on kitchen towel and break into little bits;
  • Set aside;
  • In same pan, add butter with some spray and leeks and, on low medium heat, sautée for some 5 to 6 minutes or so until softened a bit;
  • Season to taste, remove from heat and Set aside;
  • In a large bowl, add all the ingredients with the cheese, combine everything together, season and roll into balls of desired size; roll the balls in bread crumbs and form into burger shapes.
  • Using oil/fats left in pan place burgers in the pan, on low/medium heat, and cook steadily until browned underneath; add more oil if necessary;
  • Spray top of burger with oil, turn and cook until ready. Serve.

    These sound great and will be on the menu soon. Like you, I'm retired and living in Spain (Pizarra is 40mins north of Malaga) and I very much enjoy experimenting with all the wonderfully fresh produce here. Great post, thank you.
