Savoury Bacon, Cheese And Leek Potato Burger

- Can Vegetable Oil Spray shopping list
- ½oz butter shopping list
- 225g/½lb Potatoes - peeled shopping list
- 60g/2oz - Streaky bacon shopping list
- 45g/1½oz Leeks - finely sliced shopping list
- Milk shopping list
- 1 Egg Yolk - lightly beaten shopping list
- 100g/3½oz - Fresh Breadcrumbs shopping list
- 2tbsp/1oz Parmesan cheese - or to taste - grated shopping list
- Salt and freshly ground Black shopping list
How to make it
- Cook the potatoes in a large pan of lightly salted until softish, some 10 Minutes or so;
- Drain, dry out a bit and beat to a smooth but firm mash with a little milk, egg yolk and salt and pepper;
- Set aside to cool:
- In a frying pan, large enough to take the potato cakes, on medium heat, spray in some oil, add the bacon and fry, turning occasionally until crispy but not burnt;
- Remove from pan, drain on kitchen towel and break into little bits;
- Set aside;
- In same pan, add butter with some spray and leeks and, on low medium heat, sautée for some 5 to 6 minutes or so until softened a bit;
- Season to taste, remove from heat and Set aside;
- In a large bowl, add all the ingredients with the cheese, combine everything together, season and roll into balls of desired size; roll the balls in bread crumbs and form into burger shapes.
- Using oil/fats left in pan place burgers in the pan, on low/medium heat, and cook steadily until browned underneath; add more oil if necessary;
- Spray top of burger with oil, turn and cook until ready. Serve.
