Almost Weeknight Braised Beef

- 2 lb beef chuck or bottom round, well trimmed and cut into small 1/2 inch pieces shopping list
- 2 tbl oil shopping list
- 1 medium onion, finely diced shopping list
- 2 stalks of celery, finely sliced shopping list
- 4 carrots, finely sliced shopping list
- Salt and pepper to taste shopping list
- Garlic and onion power to taste (pinch of each up to 1/4 tsp) shopping list
- Dried thyme, 1/8 tsp - a little goes a long way with with dried thyme shopping list
- 2 tbl tomato paste shopping list
- 1/4 cup red wine or beef broth shopping list
- 1/2 cup water shopping list
How to make it
- Preheat oven to 375
- Heat 1 tbs oil in dutch oven over medium high heat
- Toss in all the beef, add generous salt and pepper
- Cook and stir about 5-8 minutes until pieces are no longer red on the outside
- Set beef and juices aside
- Add 1 tbs oil to the pan
- Saute onion, celery, carrot with onion powder, garlic powder, and thyme about 8 minutes until vegetables are getting soft
- Add tomato paste and cook and stir 1 minute
- Add wine or broth and water, reduce 1 minute
- Add back beef and juices
- Cover pot and place in the oven
- Turn oven temp down to 325
- Cook 1 1/2 hours
- Check 1/2 way through and add a bit (1/4 cup) more water if getting too dry
- I usually serve over egg noodles or mashed potatoes
