Rainbow Party Cake

- 4 large eggs shopping list
- 2 large egg yolks shopping list
- 2 teaspoons vanilla extract shopping list
- 1 1/4 cups buttermilk or regular whole milk mixed with 2 tsp of lemon juice shopping list
- 3 cups (12 ounces) cake flour shopping list
- 2 cups granulated sugar shopping list
- 4 1/2 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 2 sticks (8 ounces) unsalted butter, at room temperature shopping list
How to make it
- Preheat the oven to 350° F.
- Whisk the eggs, yolks, vanilla and 1/4 cup of the milk together in a small bowl.
- Combine the flour, sugar, baking powder and salt, and mix on low for about 30 seconds with electric mixer.
- Add the butter and the remaining 1 cup of milk to the flour mixture and with the mixer on low, blend together.
- Then beat on medium until light and fluffy, about 2 minutes.
- Add the egg mixture in 3 additions, scraping down the side of the bowl and mixing only until well blended
- Divide the batter in 3 bowls and tint with a few drops of food color for desired effect.
- I chose, pink, green and yellow
- Place in desired pan ( 10 x 14 ) or cupcake tins that are paper lined
- Bake 15-18 minutes for cupcake and 20-30 minutes for the cake, testing with a toothpick in center till done.
- When cake is cool, frost and decorate as desired
- Freeze well.
