Twice-baked Sweet Potato Casserole

- 6 pounds of yams (9-12 yams) shopping list
- 8 ounces of bacon, cooked, chopped and cooled shopping list
- 1/4 cup Progresso plain bread crumbs shopping list
- 1/2 cup sour cream shopping list
- 1/4 cup butter, softened shopping list
- 2 medium green onions, minced shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon black pepper shopping list
How to make it
- Heat oven to 350 degrees. Bake yams 75 minutes or until tender. Allow to cool then peel potatoes and place in large bowl and mash. Add chopped bacon, sour cream, butter, onions, salt, and pepper. Using a 1/2 cup ice cream scoop, place in baking dish. Sprinkle bread crumbs evenly over the top. Bake 20-30 minutes until bread crumbs begin to brown.
